In a large bowl add in warm water, yeast, and sugar. Gently stir and let it sit for a couple minutes or until it starts to foam.
Then add in the eggs, vanilla, and coffee.
Once combined, add in the flour 1 cup at a time.
once you have a nice dough cover the bowl with with a towel and let it rise for about 1 hour.
In a separate bowl melt 3 tbsp butter then mix in cinnamon & brown sugar to make a paste.
Once your dough has roughly doubled in size roll it out on a floured flat surface into a rectangle, about 1/4" thick.
Spread the paste onto the dough then roll it up long ways. Cut the roll into slices and place them in a greased baking dish.
Bake at 350 for about 20 minutes.
