I don’t think you need anymore convincing to try this cookie!
I first created these cookies for Valentine’s day, because when I think of Valentine’s day all I really think of is chocolate covered strawberries, they are my favorite!
So here we are with a fudge stuffed sugar cookie topped with a strawberry jam buttercream frosting, a chocolate covered strawberry, and a chocolate drizzle! …I’m salivating…

I know you’re probably thinking, these look like a lot of work, but they are totally worth it if you have the time!
If you want to make your life even easier you can try to buy premade chocolate covered strawberries at the store instead of making your own!
Chocolate Covered Strawberries
- Wash about 12 strawberries and place them on a towel to dry, make sure they are COMPLETELY DRY before dipping them in the chocolate!
- Pour 1 1/2 cups of chocolate chips into a glass bowl and microwave in 30 second intervals, stirring in between, until completely melted.
- Lay out a sheet of foil on a small cookie sheet before you start dipping your strawberries. Then get to dipping!
- Hold onto the stem and dip the dry strawberry into the chocolate then lay them on the foil on their side.
- Once all of the strawberries are dipped, place the cookie sheet in the fridge.
Chocolate Covered Strawberry Fudge Stuffed Cookie

- In a large mixing bowl pour in the shortening, sugar, brown sugar, eggs, vanilla, baking soda, and salt, mix on low speed until completely combined.
- Then add in the flour one cup at a time.
- Scoop onto a cookie sheet and indent the center of each dough ball. Put a spoonful of fudge in the center then cover with more dough and close the edges.
- Bake at 350 for about 15 minutes or until the edges are a golden brown.
- Whip the butter on medium speed until creamy.
- On low speed add in the strawberry jam, vanilla, and powdered sugar one cup at a time.
- Mix on medium speed until the mixture is completely combined and creamy.
- Once the cookies are cooled pipe frosting on however you’d like, top with a chocolate covered strawberry, and drizzle chocolate syrup on top.
