Flavor Packed Lemon Bars

I LOVE lemon bars…so I took mine to the next level!

With a flavor filled crust, a fresh lemon PACKED filling, and topped with a dusting of powdered sugar & fresh lemon zest for a super light and refreshing summer treat!

Let’s make the crust!

Preheat your oven to 350F.

In a medium sized bowl combine the crust ingredients: butter, honey, lemon juice, and flour.

Once completely combine press the crust mixture into a OILED 9×13 baking dish. I usually use a glass baking dish for these delicious treats!

Now make your filling!

​In that same bowl (because why wash more dishes…) whisk together the eggs, sugar, & lemon juice. Once combined, pour into your crust and bake for about 45-60 minutes! My oven is weird so that’s why I give you that gap, just watch them and when the top and edges are a golden brown AND the middle no longer jiggles (it’s firm) then they are ready!

Since the filling is so liquidy (I don’t think that’s a word but you get my point) it’s going to take a while to bake, but you don’t want that crust to burn so make sure it’s in the middle rack in your oven. 

Once the lemon bars are done, use a sifter or duster (no not the Swiffer) to dust the powdered sugar on the top. And then sprinkle the rest of the lemon zest on top of that! You could probably mix together the powdered sugar & lemon zest and then sprinkle that one top together, but I’ve never tried that! Maybe I will someday but every time I think of it, it’s always too late…oh well!

Refrigerate them until they are completely cooled and once you’re ready to serve cut them into squares and enjoy!

Lemon Bars

These lemon bars are the perfect combination of sour & sweet! They are a crowd favorite at any get together and a super easy dessert to whip together! They just make the absolute perfect summer treat!

Total Time 1 hour 35 minutes
Servings: 15 bars

Ingredients
  

Crust:
  • 2 Sticks Butter softened
  • 2 Tbsp Honey
  • ½ of a Lemon’s Juice
  • ½ Lemon’s Zest
  • 3 Cups Flour
Filling:
  • 4 Eggs
  • 2 Cups Sugar
  • 1 1/2 Lemon’s Juice
Topping
  • Powdered Sugar
  • 1 ½ Lemon’s Zest

Method
 

  1. Combine all of the ingredients for the crust in a large bowl. Once they are completely combined press into an oiled 9×13 baking dish.
  2. In a bowl whisk together the eggs, sugar, & lemon juice. Then pour this into the unbaked crust. Bake at 350 for about 45 minutes or until the top & edges are golden brown, the middle is firm, and the sides don’t stick to the pan.
  3. Once the lemon bars are done, let them cool for about 30 minutes and then sprinkle powdered sugar on the top and the lemon zest on top of that.
  4. Once completely cooled, cut them into squares and serve!

Notes

Rolling out the lemon’s before you cut them will loosen them up and make juicing them so much easier! 
Zest your lemons before you cut them and juice them -it’s just easier, but if you forget to zest you can always do it after they are juiced.
Make sure your seeds don’t fall in!
