Cheesy Rice, Ham, & Broccoli Casserole

This casserole is the comfy, cozy, but somewhat healthy casserole, that is easy to make and is delicious!

First, preheat your oven to 350.

Then, in a large pot, boil your rice with 8 cups of water and a dash or two of oil. Once boiling, turn down to low heat and cover. Let simmer until it’s completely cooked…soft to the touch. (This can take up to an hour, so plan accordingly).

Next, in a large bowl combine ham, broccoli, rice, cream of chicken soup, shredded cheese, salt, and pepper. Stir until completely combined.

Then pour into a large greased baking dish and cover with crushed Ritz crackers (the best part).

Then bake for about 30 minutes, just enough so that everything can cook and together!

​Once the casserole is done, scoop into bowls and serve hot! 

This is a great casserole when you have leftover ham to use up and need something that is quick to stick in the oven!

  1. Preheat your oven to 350.

  3. Pour the mixture into a greased 9×13 pan then sprinkle the crushed crackers on top.
  4. Bake at 350 for about 30 minutes.

Notes

  • You could also pour this into a pan, cover it, and freeze it after step 3 for a delicious meal that you just pull out of the freezer and make!
  • If you are putting this straight from the freezer to the oven it will need to bake for about 1.5 hours.
  • If you let it thaw completely before hand you should be good to bake it for 30-45 minutes.
