Cajun Chicken & Grits

My favorite southern comfort dish…basically any protein with cheesy grits! 

This dish is super easy and absolutely delicious!

You can make this with shrimp, tilapia, or steak as well; I just made this one with chicken and it’s better for if you have picky eaters in your house!

In a large pot, on high heat, pour in chicken broth and milk and bring to a boil.

While you’re waiting for that to boil, oil a large skillet and turn on to medium heat. Season both sides of your chicken breasts with cajun seasoning and place in the hot skillet. Put a lid on the skillet and cook for about 10 minutes, then flip, and cook for another 10 minutes on the other side.

Once your pot has come to a boil, add in your grits and turn the heat down to medium/low, stirring continuously!

Once the grits are completely cooked, add in the salt, pepper, butter, and shredded cheese. Stir until everything is melted and completely combined.

Once the chicken is done, place your grits on a plate and then slice your chicken and place the slices on top.

Sprinkle with oregano for garnish and add a lemon wedge to the side to
knock off some of the spice

Notes

  • You could use shrimp or really any other protein instead of chicken if you’d like!
