Not only are these cookies ABSOLUTELY DELICIOUS but they can be made gluten free!
They are crispy on the edges, soft in the middle, and the apples add a soft crunch while the oats and cinnamon hold everything together…it’s unbelievably good!
You can add your own twist to these by using bourbon instead of vanilla. you could also use a sugar substitute to make them sugar free, or at least refined sugar free.

Apple Crisp Cookies
Holy cow are these suckers good! Such a simple cookie idea but have so much flavor! These cookies are the perfect addition to your fall party, cookie box, or Thanksgiving table!
Ingredients
Method
- Preheat your oven to 350.
- In a large mixing bowl, on medium speed add in butter, brown sugar, sugar, eggs, vanilla, baking soda, cinnamon, and salt on low speed.
- Once completely combined add in the flour on low speed until everything is completely combined.
- Then turn off mixer and add in oats and diced apples, fold these in with a spatula.

- Scoop spoon fulls onto a cookie sheet about 3″ apart and bake at 350 for about 15 minutes or until the edges are golden brown.

- Enjoy warm or store them in a container.
