Amazing! Delicious! Sweet! I don’t have words to describe how yummy these cookies are! It’s like a mini sugar cream pie and I can’t tell you how happy I was when I first made these! I hope you enjoy them as much as I do!
Disclaimer: These cookies do take a little bit of time to make the crust (patience is key, but it’s totally worth it!)
What You’ll Need
Cookies
- 4 Sticks Butter
- 1 Cup Sugar
- 1 Tbsp Vanilla
- 1 Tsp Salt
- 5 Cups Flour
Filling
- 1/4 Cup Sugar
- 2 1/2 Tbsp Flour
- Pinch of Salt
- 3/4 Cup Heavy Whipping Cream
- 1/4 Cup Milk
- 1 Egg Yolk
- 1/2 Tsp Vanilla
- 1 Tbsp Ground Cinnamon (+ more for topping)
How To Make ’em
Preheat your oven to 350 F.
Combine all of your cookie ingredients into a mixing bowl and mix until a dough forms.
In a medium bowl add in all of the filling ingredients and whisk until everything is completely combined.
When you’re making the cookie itself, it can be a little tedious.
Take a palm full of dough in your hands and roll it into a ball.
Once you get the dough nice and warm and soft in your hands, press into the center just a little with your thumb, make sure the bottom of your cookie stays thick!
Place your cookie on the cookie sheet and press along the outer edges to make a little wall.
Your filling will be pretty thin so make sure you have a thick bottom and a tall enough edge so that it holds the filling.
Also because the filling is so thin make sure not to overflow your cookie and be careful when moving the cookie sheet into the oven.
Once your cookie shells are all made, pour in your filling until it is just below the top of the cookie edge.
Sprinkle some cinnamon on top and put them in the oven at 350 for about 25-30 minutes. You won’t notice a big color change in the cookie but the filling will be stiff, so if it’s still moving it needs a couple more minutes!
