The way my mouth waters when it’s lemon dessert season is a little unnecessary, but I get so excited! I love lemon desserts because they are refreshing, sweet, sour, and compliment almost any meal!
This cookie recipe is so easy and can be done in less than 30 minutes! So if you’re in need of a quick & easy dessert, I’ve got you covered!

Method
- Preheat the oven to 350.
- In a bowl whip the butter & sugar together.
- Once creamed, add in the lemon juice and egg and easily mix.
- Then add in the dry ingredients and mix until completely combined.
- Scoop onto a cookie sheet & bake at 350 for about 10 minutes.
- In a small bowl whisk together the powdered sugar & lemon juice until there are no more clumps.
- Once the cookies have cooled, spread some icing onto each cookie and enjoy!
As always I use my silicone baking mats for easy clean up afterwards!
