How To Make It
I use a large cast iron pan, but you can use any pan that is big enough and you can put in the oven! ………So basically just use a cast iron pan hahaha!
Preheat that oven to 350!
AND drizzle some vegetable oil in your pan, just enough to coat it and turn the stove on medium/high heat. Let your pan and oil heat up while you work with your taters! (a.k.a. potatoes)
First you’re going to cut your 5 taters into cubes! You can skin them if you want, I personally leave the skin on.
Next throw all those tater cubes into a large bowl and throw in 1 tsp of salt, 1 tsp of pepper, 1 tsp of paprika, & 1 tsp of onion powder! You could be fancy and use diced onion if you want…but I am keeping it simple!
Mix it up!

Throw those taters in your hot pan with a good amount of avocado oil and let them sizzle!
Cook them on the stove for about 5 minutes…then stir….then cook another 5 minutes.
Throw…I mean nicely set…your pan in the oven at 375 F and bake those taters for about 45 minutes.

Your tater cubes should be nice and soft!
I recently realized our oven has an air-fryer feature on it, so I turn on the air fryer on 400 for about 15 minutes and let those taters crisp up even more after they’re done cooking!

Now while your taters are still cooking, cook your 1 lb of ground sausage.
So in a medium sized pan, on medium heat, stir and cut your sausage log up until it is all brown (NO pink or red to be seen!).
Once your taters & sausage are done, drain your sausage and add it to your tater pan!
ADD CHEESE! This is my favorite part!
I use the (not-so-healthy) velveeta because I love it…BUT if you want to use another cheese that is fine, just make sure it is a good melting cheese first!
Put your cheese covered tater & sausage mix in the oven at 350 for another 10 minutes, or until your cheese is completely melted!

Once your cheese is melted, stir it all together and wait for about 30 minutes for your mixture to cool enough to package.
I use quart sized freezer bags and fill them about 1/2 – 3/4 full. I keep these in the freezer and when we want a quick breakfast or lunch we pour it in a bowl, and microwave it for about 2-3 minutes!

- Drizzle a large cast iron skillet with some avocado oil and turn the heat on the stovetop to medium/high.
- In a bowl mix together your potatoes and seasonings until the taters are completely coated.
Once your pan is hot, throw in your potatoes. - Cook them for about 10 minutes and then put them in the oven at 375 for about 40 minutes.
While your taters are cooking, cook your sausage in a skillet on medium heat, chopping occasionally until everything is brown. - Once everything is done, add in the sausage and cheese to the potato skillet. Stir until the cheese has completely melted.
