Super Hearty Loaded Chili Mac

I know, I know, there’s noodles and beans in this chili…don’t start with me!
It’s delicious!

This is a one pot recipe, so easy clean up!

I call this simple loaded chili mac because it doesn’t include the peppers & onions, but is all the goodness of chili!
I was a picky eater growing up, and I still don’t like a bunch of tomatoes and peppers…soooo I improvised with my chili mac!

In a large pot cook your ground beef on medium heat. Once the ground beef is completely cooked (no more pink), strain out the grease and leave the beef in the strainer.

You don’t have to use beef – I have used ground venison & steak before!

In the same pot, fill it with 8 cups of water and the noodles. Bring the pasta to a boil on medium/high heat for about 20 minutes, or until the pasta is fully cooked (soft to the touch-not hard to chew).

Once the pasta is done, strain out the remaining water.

Add the pasta, ground beef, beans, diced tomatoes, and tomato sauce all into the large pot. Pour in the chili powder, garlic powder, and onion powder and stir until completely combined.

Turn the pot to medium/low heat and let it all cook together. As it cooks the pasta will absorb some of the tomato sauce, I usually add in about a cup of water as it cooks, but this is optional depending on how you like your chili.

Let this cook for about 10 minutes then serve hot!

Top with shredded cheese, sour cream, and more chili powder!

ENJOY!
