Bacon Wrapped Cheese Stuffed Dates

Don’t knock it ’til you try it! These are absolutely delicious!

I’ll be honest these are a little tedious and kinda messy when you’re prepping them, but just keep a positive attitude because you mouth and stomach will thank you later!

This appetizer or side dish is so unique and absolutely delicious! Dates are sweet which complement the bacon and cheese very well! Don’t knock it ’til you try it, I know it sounds strange, but I promise you won’t regret it!

  1. Preheat your oven to 350.
  2. Take your pitted dates (if they aren’t pitted just slice the date down the middle and pull out the pit -it’s super easy!) and lay them on a cookie sheet – either leave them whole or cut them in half, this is completely up to you!
  3. In a small bowl stir together the cream cheese OR goat cheese, garlic powder, basil, thyme, & rosemary. (If you want a shortcut just use pre packaged garlic & herb cream cheese or goat cheese)
  4. Once your cheese mixture is completely combined take a small spoonful and add it to the middle of your dates.
  5. Then take each date and wrap it in bacon. If you are using the whole date I would use the whole slice of bacon, but if you cut the dates in half I would also cut the bacon slices in half and then wrap them.
  6. In another small bowl stir together the balsamic vinegar and honey, then take a basting brush and brush a little bit on each wrapped date.
  7. Bake at 350 for about 30 minutes or until your bacon is completely cooked.
  8. Once they are done, take your basting brush and brush more of the glaze on top of each date. (An easier option is to put these all in a large container and pour the glaze on top, close the lid, and give it a gentle shake- I do this if I’m not eating these right away and doing meal prep because they’re gonna go in the container anyway so they can just marinate.) Notes

  • Store these in the fridge ad when you’re ready to eat, just pop’em in the microwave for about 30 seconds!
