
I know you’re probably thinking “that color does not look appetizing” the elderberries are a dark purple so when they’re blended up together with the other ingredients and mixed into the muffin batter they make a dark brown color.
I came up with these when I had several things on my to do list and 2 of those things was making an elderberry elixir and making muffins.
I had made the elderberry elixir and then was trying to figure out what to do with the solids that were left in my pot after straining my liquid. So I blended it up and made a paste out of the elderberries, ginger, lemon, cinnamon sticks, & tumeric. You could absolutely leave this out for just some plain blueberry crumble muffins or you can just use certain ingredients, but these are a health muffin at its finest!
Elderberry Elixir:
- 2 Cups Elderberries
- 8 Cups Water
- 1 Lemon, sliced
- 1 Ginger Branch, sliced
- 5 Cinnamon Sticks
- 2 Tbsp Turmeric
In a large pot combine all of the ingredients and bring it to a boil on medium/high heat. Let it boil for about 30 minutes, then turn to low heat and let it simmer for an hour. Strain out your mixture, saving the liquid for your elixir. Put the solids in a blender and blend until smooth (this is your antioxidant mixture).

- In a mixing bowl mix together the brown sugar & butter until combined.
- Then add in the egg, vanilla, & milk.
- Once that is all combined, add in the flour, baking soda, baking powder, & salt. Mix until the mixture is smooth.
- Fold in the elderberry mixture and the blueberries.
- Scoop into a greased muffin tin, filling each cup about 3/4 full.
- In a small bowl mix together the 4 tbsp butter, oats, & cinnamon sugar until a crumble forms. Then sprinkle some on top of each muffin.
- Bake at 350 for about 20 minutes.
