Heaven in a Peach Pastry!

Oh my goodness! When I had the thought of making this and making it taste like a grilled peach vanilla bean sundae I had no idea it would actually turn out this good!

The crust is a little crispy on the outside but soft and fluffy on the inside and you get the warm peaches with the vanilla cheesecake filling and the little crisp from the topping mhmm DELICIOUS!

These will have your eating companions thinking you bought these from a bakery and wanting more!

These could easily fall into the category of breakfast or dessert or BOTH! You could easily make these with any fruit you’d like!

Peach Pasteries

Oh my goodness! They taste just like a grilled vanilla bean ice cream sundae! These delicious pastries are absolutely to die for! They are a bakery style pastry that you are going to impress any guest with! And they're easy to make!

Servings: 6 Pasteries

Ingredients
  

Dough
  • 3/4 Cup Warm Milk
  • 1/4 Cup Warm Water
  • 2 Tsp Yeast
  • 2 Tbsp Sugar
  • 1 Egg
  • 2 1/2 Cups Flour
  • 1/2 Tsp Salt
Filling
  • 4 oz Block Cream Cheese
  • 1/4 Cup Heavy Cream
  • 1/2 Tsp Vanilla Bean Powder To make this I placed a couple whole vanilla beans into a coffee grinder and made a powder. You can use just vanilla extract instead if you don't have this option.
  • 1 Cup Powdered Sugar
Topping
  • 2 Cups Peaches sliced
  • 1 Cup Graham Cracker Crumbs
  • 1/4 Cup Brown Sugar
  • Peach Juice optional

Method
 

Dough
  1. In a medium bowl mix together the milk, water, yeast, & sugar, give it a little mix and then let it set for about 5 minutes or until it has bloomed!
  2. Then add in the egg, whisk it together, then add in the flour & salt and mix until a dough forms. Knead until smooth, then cover with a towel and let it rise for about 1-2 hours.
  3. Once the dough has roughly doubled in size spray the top with a little oil, and oil the pan your going to bake them on. Oiling just acts like flour and makes the dough easier to shape! Break your dough into 6 equal balls (you could do more, just make them smaller). Then flatten your dough ball out until it's about 1" thick and indent the center with the bottom of a measuring cup or your palm.
Filling
  1. In another medium mixing bowl whip together the cream cheese, heavy cream, vanilla bean powder, & powdered sugar.
  2. Place a spoonful of filling into each dough bowl.
Topping
  1. Place the fresh sliced peaches on top of the filling, try not to get too much liquid with this if you are using canned or frozen (now thawed) peaches.
  2. In a small bowl mix together the graham cracker crumbs (a.k.a crushed graham crackers) and the brown sugar. Then sprinkle a good bit on top of the peaches.
  3. Bake at 350 for about 20 minutes or until the edges of your pastries are a golden brown! The edges should be a little crispy and the inside should be soft and fluffy!
  4. Once they come out of the oven you can drizzle with some of that peach juice that you strained off earlier.
    Enjoy warm! Expect these to disappear!

Notes

You could absolutely use different fruit with this! I was purley going for mimicking a grilled peach vanilla bean sundae! But if you wanted to do apple you could add some cinnamon, or you could do strawberry and leave out the vanilla bean powder for strawberries & cream, or you could do a mixed berry with raspberries, blackberries, & blueberries and add a powdered sugar glaze on top! There are so many options and each way is absolutely delicious!
