Canning Watermelon Lemonade Electrolyte Concentrate

Using the whole lemon, ginger, & mineral salt makes this electrolyte drink super nutritious!

Canned Watermelon Lemonade Electrolyte Concentrate

A sugar free & delicious electrolyte drink that is a great way to keep everyone hydrated with great taste without breaking the bank!

Total Time 2 hours
Servings: 10 Jars

Ingredients
  

  • 1 Watermelon
  • 12 Lemons
  • 1 Ginger Root
  • 3 Cups Monk Fruit Sweetener
  • 1 tbsp Mineral Salt

Equipment

  • 1 Blender
  • 10 Pint Jars & Lids
  • 1 Water Bath Canner

Method
 

  1. Cut up your watermelon and blend it up. Then strain out the seeds. Pour this into a large bowl and put to the side.
  2. Peel your lemons, yep just cut off the rind and throw the rest of the lemon into the blender. And cut up your ginger, then blend those up with a little bit of water to help them blend. Strain out the pulp.
  3. Pour the watermelon juice & lemon ginger juice into a large pot and add in the monk fruit sweetener and salt.
  4. Then place it on medium heat until it reaches 190 degrees F.
Canning
  1. Fill your water bath canner about 1/2 way with water and put it on high heat.
  2. While your mixture is still hot pour it into your jars leaving about 1/2" head space. Put your lids on finger tip tight and place them in the water bath canner. Make sure your jars are covered with about 1" of water and once the water is boiling start your 15 minute timer.
  3. Once your jars have processed take them out of the canner and place them on a towel to cool. Once the lids have sealed (popped down) take the rings off and label them. Let them cool completely before putting them away.
