Disclaimer About This “Chef”
Just to give you a heads up- I am a simple cook/baker. I make things like they used to in the old days. And I’m a busy homestead wife & mama so sometimes the simpler the better!
I never actually set times for my meals when I’m cooking or baking, so the times given are guesstimated on how long it usually takes. I’ve always liked to say until it’s golden brown or until “it looks done.”
Also, oven temperatures – just remember 350 is always a safe bet and on the middle rack.
I don’t specify in my recipes how much a “pinch” is or a “dash” of something is, I kind of just look at it and know.
If I ever say flour, it means all-purpose flour, if I mean something else, I will specify.
Vanilla always means vanilla extract.
Sugar always means granulated sugar, and powdered sugar always means confectioners’ sugar.
I always measure my butter by the stick size not cups, because unless I’m desperate and have to dig into the tub of butter, I always use sticks.
My meals are not hard to double, so if you look at it and think “oh, this is not going to be enough for my family,” then make more! But if you think it’s going to be too much, don’t think that leftovers aren’t always good to have around!
A baking dish, also known as a casserole dish, is the rectangle glass thing you put in the oven, these can also come in all sorts of different shapes and sizes and can also be ceramic instead of glass.
A cookie sheet is the flat silver tray that can have sides or not have sides, but in my opinion sided ones are better.
A pot, also known as a saucepan, is what you put on your stove top when you’re making a more liquid dish or anything you need to boil water for.
A pan, also known as a skillet, is a flatter object used on your stove top when you are making things such as grilled chicken but don’t want to start up the grill.
A cast-iron pan is the best type of pan (although they are heavy) because they can go on both on your stove top and in your oven (or on the grill or smoker) all with the same dish, amazing!
A baking mat is a silicon liner that you put in the bottom of your cookie sheet that you can buy on amazon or really anywhere, these things will change your cookie baking life, I highly suggest you invest in a few!
I’m not even going to explain what a whisk and a spoon are, if you don’t know that then I suggest you going back to just watching the cooking channel, it might be better for everyone.
Also, if you are looking at a recipe and there’s no instructions for the butter or cream cheese sticks/bricks, always assume it’s softened or melted, I mean do you know how hard it is to mix a cold stick of butter!?
I’m never too detailed on my directions either, you mix it, cook it, and serve it, and you’re golden!
You’ll also notice that no title says “homemade” …because it’s all homemade y’all!
