Mandarin Chicken Salad

I LOVE this salad!
​It is light, but filling, and super healthy! 

It’s a great meal for a hot summer day, especially if you’ve been outside working all day.
​It’s full of nutrients and fills your body up with greatness!

First turn your grill onto medium/low heat (you can also use a large skillet).

Salt and pepper both sides of each chicken breast and place them on the grill…close the lid and let them cook for about 10-15 minutes and then flip. (Some chicken breasts might take longer to cook depending on the size)

While the chicken is cooking, grab a large bowl and combine spinach, romaine lettuce, mandarin oranges, almond slices, and chow mein noodles.

For the Dressing:

In a small bowl combine rice vinegar, olive oil, brown sugar, salt, and sesame seeds.

This will make more than you need for the salad, but this dressing is great to have on hand for other salads as well!

Whisk this mixture together and pour into a bottle for storage.

You could also just pour all of the ingredients into a ball jar then shake and store in the fridge!

Once the chicken is done, cut the breasts into slices and place them on top of the salad.

Then drizzle the desired amount of dressing on top.

This salad is great while the chicken is hot, OR you can make it ahead of time and eat it with cold chicken for lunches. 
It’s delicious either way!
