Crunchy, Chewy, Lemony, Sweet, all in one!
I stumbled upon making these one day because I for some reason wanted a “summery brownie” whatever the heck that meant…well this is what I came up with! And they turned out absolutely delicious!
What You’ll Need
- 2 Sticks Butter, melted
- 1 1/2 Cup Brown Sugar
- 1/2 Cup Sugar
- 2 Eggs
- 4 Tsp Lemon Juice
- 1 Tsp Baking Powder
- 1/2 Tsp Salt
- 1 1/4 Cups Flour
- 1 Lemons Zest (or 2 Tbsp Lemon Powder)
How To Make ’em
Preheat your oven to 350.
In a large bowl combine butter, brown sugar, & sugar. Then add in the eggs and lemon juice. Once that is completely combined, add in your baking powder, salt, flour, and lemon zest or powder.
I love using lemon powder because it gives you some much more flavor then the zest and has great nutritional value because it’s the whole lemon just dehydrated! See my page Making Lemon Powder to make your own!
Once everything is completely combined pour it into a grease 9×13 baking dish and bake at 350 for about 30 minutes. They should be a nice golden color all the way around and slightly soft on the inside still!
These are a great option for changing it up from the traditional lemon bar and I feel like they’re more kid friendly as well because they’re not covered in powdered sugar, so not as messy!

You could also use unbleached parchment paper in the bottom of your pan instead of greasing it – this makes it super easy to just pull the whole pan of brownies out in one sweep!
