Chicken & Waffles With Hot Honey

Breakfast? Dinner? Lunch? A Snack? YES!

Disclaimer: this is what I call a “busy recipe” it’s an hour of constant cooking and multitasking, so prepare yourself. But it’s SO WORTH IT!

For the Chicken:

In a medium pot fill in half way with oil for frying, and let it heat up on medium/high heat.

Cut up your chicken breasts into cubes of any size you want (this will depend on your sandwich size, if you want bite size or a larger size).

In a pie plate pour in 1 cup of flour and 2 teaspoons of cajun seasoning and stir it up.

In a small/medium bowl whisk together 2 eggs and 1/2 cup of buttermilk.

Once your chicken is cut up and your oil is up to temp, dip each chicken piece into the flour mixture, then the egg mixture, then back into the flour mixture, then gently place into the hot oil.

​Do this for all of your chicken pieces, and fit as many as you can in one pot. Let your chicken cook for about 10 minutes in the oil, or until the outside is a nice crispy golden brown.

For the Waffles:

Heat up your waffle iron.

In a large bowl combine 2 cups flour, 2 teaspoons baking powder, 1/2 cups sugar. Whisk until completely combined.

Add in 2 eggs, 2 cups milk, 1/2 cup vegetable oil, pinch of salt, and 1 teaspoon of vanilla. Stir until completely combined.

Pour enough of the mixture in your hot and greased waffle iron to fill the bottom of the iron (every waffle iron varies in size).

Cook your waffles until they are golden brown.

Once the chicken and waffles are done, cut up your waffles to the size sandwich you want! I usually do the bite size sandwiches, but you can also cut it up and make it all one big plate. 

Drizzle with honey or syrup.
