Kindness Cookies for the Win!
You’re probably wondering why I call these kindness cookies…well I was talking to my husband one night trying to come up with more cookie flavors and long story short I asked him “what flavor cookie would you name kindness?” to which he responds “what?” So I repeat myself… and he responds with “I feel like something very unique because it’s rare to find random kindness anymore but obviously something sweet, and maybe fruity” So we came up with lavender blackberry because purple is a calming color and lavender is known to be refreshing and kind to the senses!

Now to the part you really care about…
How to make the cookies:
In a mixing bowl on medium speed combine butter, sugar, and brown sugar.
Add in egg, vanilla, salt, cream of tartar, baking soda, and lavender extract.
In a small saucepan, on medium/high heat, combine 1 cup of blackberries and 1/2 cup of honey. Bring this to a boil, then turn off the heat. Then use an immersion blender to mix. Use a strainer to separate out the seeds. Add in this mixture to your mixing bowl, then add flour one cup at a time on low speed.
Mix until completely combined on medium speed.
Then scoop spoonfuls onto a cookie sheet (about 2-3″ apart) and bake at 350 F for 10-12 minutes.

For the frosting:
In a mixing bowl whip butter and cream cheese.
Add in lavender extract and then powdered sugar 1 cup at a time.
Whip on high speed for about 30 seconds.
For the topping:
In a small glass bowl, warm blackberries in the microwave for 45 seconds.
Add in 2 tablespoons of sugar and stir.
Now to assemble them!
Once the cookies & topping are cooled, frost cookies however you’d like, then pour a small spoonful of sugared blackberries over top, and then sprinkle with lavender flowers.
This recipe makes about 10-14 cookies, depending on how big you make them!
